Chicken or Beef Satay w/ Peanut Sauce

easy-to-follow satay...

INGREDIENTS
boneless/fillet chicken or sirloin steak
Marinade:
1 small onion, finely chopped
1 garlic clove, crushed
1-inch ginger, peeled and crushed
2 tbsp. soy sauce
2 tsp. ground red chili (optional)
1 tsp. coriander, ground
2 tsp. brown sugar
1 tbsp. lime/lemon juice
1 tbsp. vegetable oil
Peanut Sauce:
1 1/2 cup coconut milk
4 tbsp. crunchy peanut butter
1 tbsp. fish sauce (patis)
squeeze of lime/lemon juice
salt and pepper to taste

1. Trim any fat from chicken or beef and cut chicken into thin strips, about 3 inches long.
2. To make the marinade, combine all ingredients in a shallow dish and mix well. Add chicken or beef strips and turn in marinade until well coated. Cover with plastic and leave to marinate for at least 2 hours, or overnight in the refrigerator.
3. Remove meat and arrange on satay sticks.
4. Broil or grill satays for 8-10 minutes, turning and brushing occasionally with the marinade until cooked.
5. Meanwhile, to make the sauce. mix coconut milk with the peanut butter, fish sauce, and lemon/lime juice in a saucepan. Bring to a boil and cook for 3 minutes; season to taste.
6. Transfer sauce to a serving bowl and serve with the cooked satays.

Neapolitan Pork Chops

Try this very easy recipe. Adding a little twist to your conventional pork chop dish. My hubby loves it, saying it has a Southern taste in it, it's like he's in Louisiana. :-) Try it out for yourself!

INGREDIENTS:
6 pcs. pork chops
3 tsp. butter
3 tsp. corn starch dissolved in 1/2 cup water
6 cloves garlic , diced
4 pcs. medium tomatoes, diced
2 pcs. medium onions, diced
5 tbsp. tomato ketchup/paste
salt and pepper to taste
fresh basil , chopped (optional)
grated parmesan cheese

1. Broil chops in a preheated oven, or fry in a skillet. Set aside. Keep warm.
2. Melt butter. Sautee garlic, onions and tomatoes until soft. Add in corn starch and tomato ketchup/paste. Add salt and pepper to taste.
3. Remove sauce from pan and place on top of chops. Garnish with chopped basil and pasmesan.
4. Serve while hot.

Roasted Rosemary Chicken

This is a very simple recipe, anyone can just follow even with a blindfold. Try it!

INGREDIENTS:
1 whole chicken
2 pcs. lemon grass
1 big onion, diced
1 big tomato, diced
2 tsp. rosemary
3 tsp. thyme
2 tsp. soy sauce
3 tsp. chicken broth
salt and pepper to taste

* mix all ingredients to make a marinade. add chicken and gently rub herbs on skin.
* stuff in lemon grass with the onions and tomatoes and marinate for at least 2 hours (or overnight) inside the ref, sealing container with a plastic.
* broil/roast chicken for 45-60 mins at 180-200 degrees, until it turns brown. baste chicken with the remaining juices every 10 mins.
* remove from oven and place on a warm serving dish. (optional) garnish with steamed/buttered broccolli and carrots. serve while hot.

a hard start

just started this blog so i'm still trying to figure out what to do first. :-)
i should be able to post recipes the next few days, will just need to sort it out...
btw, i'm planning on making Chicken-Sesame Satay for dinner, so i'm gonna pick up some ingredients from the grocery before going home... keep you posted!

Mother's Day

It was a typical Sunday, it's just that it's especially for me-us-mothers!
Because my hubby had a basketball schedule at 11am, family day was moved a little later. I met my Titas with my daughter at Glorietta and the mall was just jampacked with families from all over, trying to enjoy the day. I have walked past a few restos and oh wow, long queue for the diners. To avoid cramping up with the others, we ended up eating at the FoodChoise. Only had wraps for lunch, and just ate the extra pasta from Tita P. Gotta watch that diet, even I know that a wheat wrap won't help with mayo on the chunky chicken and the hot sauce from the pasta. Oh well, can't help myself, I just love it. Yum! :-)
Spent almost an hour at Timezone with my daughter, gosh, she wouldn't miss it every Sunday! After a few turns, I decided to buy 2 mini cheesecakes for my mom and my mom-in-law. Flower is overrated, plus, extra expensive for the occasion, that's why I decided to get a piece of the sweet little things. It's sugar-free, so it won't hurt that much.hehe.
Have to rest for a while, so I took a nap before hitting the dinner table. And what's for dinner? Guess what!?! My hubby treated us to Racks! The best ribs in town! And I totally agree. My daughter also loved their mac & cheese, and I'm definitely looking forward for the next. Omg, imagine the calories for the day. Sigh!
